I have just put my stereo into my car but it won't hold the memory as soon as I turn my car off the memory goes

Does your car have an ACC position (Manual page 3)?

If so, double check that you have the power connections set according the diagram in the Installation Guide.

it goes off automatically but still not keeping the same memory?

Try the reset on page 6 of the Manual and give it another shot.

Just to be sure we're on the same page though, when you say "keeping the same memory" what are you referring to exactly?

It goes back as a reset put in the preset channels but always goes back as if no memory channels and need to start everything again

I would suggest checking the cables connection again with the installation company/guy and give it another shot.
