reading emails from exchange seems to ignore the character encoding.

Is there a way to force the email app to display emails using a different encoding?

There doesn't appear to be a way to do this by any normal means in the default email application.

Are you able to set up your account in a different email app, like Gmail?

Is it possible to connect to Microsoft Exchange Server with the gmail app?

Gmail does support Exchange accounts. When you set up a new account you get 3 options; Google, Personal (IMAP/POP) and Exchange.
