How do you change the background colour from white to black on the app screens

You can't as this is now Googles choice in colour

I was having problems with my phone so repaired it yesterday before that you could change it in settings now can't find it have they just changed it?

Repaired had upgraded to lollipop a week ago and battery life was terrible so repaired with Sony companion
