I need to take pictures at least in 300 dpi, but Sony Xperia Z5 Premium take them in 72, how can I change to 300 dpi before I take pictures? I bought this phone just because the features of the camera. I also want to know, how I can deactivate the automatic ISO in manual when I want to use 23 MP, and even if it is not manual. I can change it only in 8 MP, but obviously, is not what I want and what I need.

The dpi value is just a number in the EXIF data - it has no meaning unless you state a physical picture size in inches or centimeter.
You can easily change this value in any picture you already have with freeware tools, e.g. Exif Pilot (http://www.colorpilot.com/exif.html).
The second part of your question I can't answer, because I am using a Xperia Z3 Compact - the one this section refers to - and with the Z3 Compact it is possible to change ISO to manual even in the highest resolution in manual mode.
You better raise this question in the Z5 section.
