Since I've updated my phone I'm no longer able to do Wi-Fi calling which is a bit of a pain as where I live the Phone signal is is very poor

can you check if the wifi calling feature is turned on?

You can try to test if the option will appear in safe mode mode or the issue will remain.
If the issue remains, try to perform software repair and check again .
Also, what's the model of your phone?
