Been trying to use my XM 3s for MS Teams calls on my new Mac Mini M1. Problem is that sound (both ends) breaks up and is severely distorted for both me and the people on the other end. Works flawlessly with a MacBookPro, several
iPhones and an HP laptop. But not with the M1. My AirPods work flawlessly with all devices i throw at them, including the m1.

A factory reset of the headphones did the trick. Have now been using them for three consecutive days without even a minor hiccup.

Did you select the correct BT profile?
Also you might want to turn off the NC function. Sometimes this improves the Call quality.
Finally please check if the software of your headphones is up-to-date.

I don’t think I have an option to choose profile. They are likely connected with A2DP, AVCRP and HSP for different purposes. A2DP seems to work flawlessly, HSP not so much.  ;
Firmware is up to date.
There may be an issue with the codec (or implementation) on the M1. Since it works flawlessly with other devices, there could be no other explanation (in my humble opinion of course).
It's also natural for 2 Apple devices to be working together, that's what Apple's all about.
According to the spec sheet, the XM3s support the SBC, AAC, aptX, aptX HD, and LDAC codecs and the A2DP, AVRCP, HFP, and HSP BT profiles. It might be worth a shot to contact Apple support and see which codec/profile combo is causing an issue and whether you can switch profiles or modes as Peter mentioned (I know it can be done on Windows, but I have no idea when it comes to macOS personally).
